Event Description

In honor of the annual Mole Festival in Mexico City, Maya & Tamayo will introduce four new Moles, Mexico’s national dish.These colorful sauces are a vibrant blend of spices, herbs & sometimes up to twenty traditional ingredients. Some spicy, some sweet & all packed with authentic flavor–a culinary celebration inspired by Mexican tradition.

All moles served with Mexican rice and beans

RED MOLE CAZUELA
Guajillo and casacabel chilies/beef shank/cured cactus leaves/avocado leaves/pickled red onions/soft corn tortillas

MOLE PIPIAN
Sweet corn tamal/roasted vegetables/nopal cactus salad/pepitas

WHITE MOLE
Half grilled organic chicken/sweet plantains/chile guero escabeche/cilantro

MOLE NEGRO ENCHILADAS
Oaxaca chiles/pork carnitas/sesame seeds/crema fresca/refried pinto beans/cured onions
